Before you start work, basic bench test is required - trainer will pick a pork shoulder or a leg
show the candidate and ask to repeat (to de bone shoulder or a leg) to assess basic knife skills
and knowledge. Your pay rate will depend on your knife skills and speed you can de bone.

• Must have minimum 2 years of knife experience and work on a line
• Must have knowledge of: Breaking down pork legs, de-boning shoulders (client request is to
De Bone 21 shoulder on a line per hour per person)
